The head chef of Melbourne’s Hope St Radio looks to her mixed Jewish heritage and Italian travels for meals filled with ‘immigrant grandma energy’

I haven’t had formal training as a chef; rather, my food background lies in my blended Jewish culture, my family’s food heritage and what I have learned on my travels and in past restaurants and kitchens, and continue to learn day to day with my team at Hope St Radio in Melbourne.

In my world, the food of home is everything. I was raised in a mixed Jewish family, with immigrant parents and grandparents always hovering about. My father and his family are from the Sephardic world, specifically Morocco. My mother and her family are Ashkenazi Jews, from Germany and eastern Europe.

How to use up a whole head of lettuce without making salad | Kitchen aide
Tue, 30 Apr 2024 13:00:28 GMT

Char it, grill it, even soupify it – our panel of cooks lets us in on secret ways to enjoy lettuce

How to use up a whole head of lettuce before it turns – no salad, please
We’re talking about how to apply heat here, because raw lettuce is all about salad (unless you’re using the leaves to cradle mince or mushrooms, which is also an excellent shout). Braising is as good a place to start as any, says Farokh Talati, head chef at St John Bread and Wine in London. Cut the lettuce in half through the root and season, and get a cast-iron pan on the heat. “If I was doing this at the restaurant,” Talati says, “I’d use beef dripping, but you could fry bacon in vegetable oil instead, then lift it out and use the fat left in the pan; or, for vegetarians, just use olive oil.” Once the fat is smoking hot, pop in the lettuce cut side down, cook until well charred – “We’re talking dark” – then take out of the pan. Talati would then fry chestnut mushrooms or poached sweetbreads and smoked bacon, before returning the lettuce to the pan with a little chicken or porcini stock, and perhaps some thyme and crushed garlic. Cover, simmer until you have “a lovely rich sauce”, and finish with a splash of balsamic or sherry vinegar.

For a thrill from the grill, Olly Oakley, head chef at the Harcourt Arms in Oxfordshire, barbecues lettuce whole. “It ends up with a nice, smoky, warm middle,” he says, making it ideal for serving with a caesar-type dressing or anchovy butter, plus a smattering of pangrattato to “hearten things up”. Alternatively, Talati adds, rub seasoned lettuce wedges with extra-virgin olive oil and harissa. “Really work them into the leaves, then get it on the barbecue and cook, turning every three minutes, until wilted.” Transfer to a tray and “rest whatever else you’re grilling, be that sausages, pork chops or steak, on top of the lettuce, so all the resting juices drip on to it”.

Food importers in UK say new Brexit checks could add 60% to costs

Businesses say fees for Dover inspections are much higher than first thought and will push up shop prices

Importers of food from the EU into Britain have said newly introduced post-Brexit checks could increase their costs by up to 60%, pushing up prices for customers and driving some shops out of business.

After five previous delays, the UK government on Tuesday introduced the physical checks on animal and plant products entering from the EU, having revealed at the start of this month that it would be implementing a common user charge (CUC) of up to £145 per consignment.

The £5 coffee is coming – but should we swallow it?
Tue, 30 Apr 2024 08:20:56 GMT

A large takeaway flat white will already set you back £5.19 in London and other cities aren’t far behind. If cafe owners aren’t getting rich off our caffeine habit, who is?

It was one of those London museum cafes where buggies block the entrance and children trail veggie straws across the floor. The queue of parents stretched to the door and the staff appeared frazzled. I ordered an iced oat milk latte. “That will be £4.50,” said the server. I remember the sensations that follow acutely.

Shock. How much? Regret. I don’t want it. Self-recrimination. Why didn’t I check the price? Embarrassment. If I say I don’t want it, everyone will hear. Acceptance. I’ll pay for it, but I’m never ordering here again. I drank every sip of the coffee, waited for the ice to melt, and drank that, too. I was out of sorts for the rest of the day.

Six people have been killed and more than 200 injured in attacks by bears over the past year

Japan is to trial an AI bear-warning system after a record number of attacks on humans over the past year as the animals struggle to find their staple foods.

A pilot system in Toyama prefecture, central Japan, will monitor live feeds from government, municipal and private security cameras to identify bears on the move in areas close to people, and send instant warnings to relevant local authorities, police and hunters. AI will also be used to monitor bears movement patterns and try to predict their future whereabouts.

Eco island hopping, world-class food and Vikings: Denmark’s 2024 cultural highlights
Thu, 25 Apr 2024 09:12:49 GMT

You don’t really ever need extra reasons to visit Denmark, but the country’s sheer variety of cultural highlights looks set to enliven any stay this year

Stargazing, seals and sandbanks in Mandø
Denmark’s wilderness zones and sparsely populated isles have long been havens for nature lovers and stargazers. Mandø, on the south-west coast of Jutland, is the most recent addition to the country’s four Dark Sky Parks. A small island in the Wadden Sea National Park, Mandø is most easily accessed at low tide via tractor bus over the causeway from the mainland – adding to the adventure and reducing the chances of latecomers’ annoying car headlights ruining your night vision. By day, you’ll likely want to visit the lovingly preserved, thatched and white-walled Mandø House museum (an early 19th-century shipmaster’s home), not to mention the island’s landmark windmill and church. Observe thriving seal and migratory bird species on a bike ride around the marshes and sandbanks.

Raise a glass to (probably) the world’s best beer
Not content with producing, probably, the best beer in the world, Carlsberg has created the impressive Carlsberg City District in one of Copenhagen’s most historic quarters. The recently completed Home of Carlsberg is the result of an extensive five-year museum revamp to bring history to life through interactive displays and guided tours of the old cellars. With a beautifully appointed gallery of vintage bottles, a stable with draught horses that hark back to the days of carts hauling barrels through Copenhagen’s cobbled streets, and tasting sessions too, if you’re in Copenhagen and you love beer, this is one not to be missed. Definitely.

What is Blockchain: Everything You Need to Know (2022)
Mon, 18 Apr 2022 05:49:00 +0000
What is Blockchain

If you want to pay online, you need to register an account and provide credit card information. If you don't have a credit card, you can pay with bank transfer. With the rise of cryptocurrencies, these methods may become old.

Imagine a world in which you can do transactions and many other things without having to give your personal information. A world in which you don’t need to rely on banks or governments anymore. Sounds amazing, right? That’s exactly what blockchain technology allows us to do.

It’s like your computer’s hard drive. blockchain is a technology that lets you store data in digital blocks, which are connected together like links in a chain.

Blockchain technology was originally invented in 1991 by two mathematicians, Stuart Haber and W. Scot Stornetta. They first proposed the system to ensure that timestamps could not be tampered with.

A few years later, in 1998, software developer Nick Szabo proposed using a similar kind of technology to secure a digital payments system he called “Bit Gold.” However, this innovation was not adopted until Satoshi Nakamoto claimed to have invented the first Blockchain and Bitcoin.

So, What is Blockchain?

A blockchain is a distributed database shared between the nodes of a computer network. It saves information in digital format. Many people first heard of blockchain technology when they started to look up information about bitcoin.

Blockchain is used in cryptocurrency systems to ensure secure, decentralized records of transactions.

Blockchain allowed people to guarantee the fidelity and security of a record of data without the need for a third party to ensure accuracy.

To understand how a blockchain works, Consider these basic steps:

  • Blockchain collects information in “blocks”.
  • A block has a storage capacity, and once it's used up, it can be closed and linked to a previously served block.
  • Blocks form chains, which are called “Blockchains.”
  • More information will be added to the block with the most content until its capacity is full. The process repeats itself.
  • Each block in the chain has an exact timestamp and can't be changed.

Let’s get to know more about the blockchain.

How does blockchain work?

Blockchain records digital information and distributes it across the network without changing it. The information is distributed among many users and stored in an immutable, permanent ledger that can't be changed or destroyed. That's why blockchain is also called "Distributed Ledger Technology" or DLT.

Here’s how it works:

  • Someone or a computer will transacts
  • The transaction is transmitted throughout the network.
  • A network of computers can confirm the transaction.
  • When it is confirmed a transaction is added to a block
  • The blocks are linked together to create a history.

And that’s the beauty of it! The process may seem complicated, but it’s done in minutes with modern technology. And because technology is advancing rapidly, I expect things to move even more quickly than ever.

  • A new transaction is added to the system. It is then relayed to a network of computers located around the world. The computers then solve equations to ensure the authenticity of the transaction.
  • Once a transaction is confirmed, it is placed in a block after the confirmation. All of the blocks are chained together to create a permanent history of every transaction.

How are Blockchains used?

Even though blockchain is integral to cryptocurrency, it has other applications. For example, blockchain can be used for storing reliable data about transactions. Many people confuse blockchain with cryptocurrencies like bitcoin and ethereum.

Blockchain already being adopted by some big-name companies, such as Walmart, AIG, Siemens, Pfizer, and Unilever. For example, IBM's Food Trust uses blockchain to track food's journey before reaching its final destination.

Although some of you may consider this practice excessive, food suppliers and manufacturers adhere to the policy of tracing their products because bacteria such as E. coli and Salmonella have been found in packaged foods. In addition, there have been isolated cases where dangerous allergens such as peanuts have accidentally been introduced into certain products.

Tracing and identifying the sources of an outbreak is a challenging task that can take months or years. Thanks to the Blockchain, however, companies now know exactly where their food has been—so they can trace its location and prevent future outbreaks.

Blockchain technology allows systems to react much faster in the event of a hazard. It also has many other uses in the modern world.

What is Blockchain Decentralization?

Blockchain technology is safe, even if it’s public. People can access the technology using an internet connection.

Have you ever been in a situation where you had all your data stored at one place and that one secure place got compromised? Wouldn't it be great if there was a way to prevent your data from leaking out even when the security of your storage systems is compromised?

Blockchain technology provides a way of avoiding this situation by using multiple computers at different locations to store information about transactions. If one computer experiences problems with a transaction, it will not affect the other nodes.

Instead, other nodes will use the correct information to cross-reference your incorrect node. This is called “Decentralization,” meaning all the information is stored in multiple places.

Blockchain guarantees your data's authenticity—not just its accuracy, but also its irreversibility. It can also be used to store data that are difficult to register, like legal contracts, state identifications, or a company's product inventory.

Pros and Cons of Blockchain

Blockchain has many advantages and disadvantages.

Pros

  • Accuracy is increased because there is no human involvement in the verification process.
  • One of the great things about decentralization is that it makes information harder to tamper with.
  • Safe, private, and easy transactions
  • Provides a banking alternative and safe storage of personal information

Cons

  • Data storage has limits.
  • The regulations are always changing, as they differ from place to place.
  • It has a risk of being used for illicit activities

Frequently Asked Questions About Blockchain

I’ll answer the most frequently asked questions about blockchain in this section.

Is Blockchain a cryptocurrency?

Blockchain is not a cryptocurrency but a technology that makes cryptocurrencies possible. It's a digital ledger that records every transaction seamlessly.

Is it possible for Blockchain to be hacked?

Yes, blockchain can be theoretically hacked, but it is a complicated task to be achieved. A network of users constantly reviews it, which makes hacking the blockchain difficult.

What is the most prominent blockchain company?

Coinbase Global is currently the biggest blockchain company in the world. The company runs a commendable infrastructure, services, and technology for the digital currency economy.

Who owns Blockchain?

Blockchain is a decentralized technology. It’s a chain of distributed ledgers connected with nodes. Each node can be any electronic device. Thus, one owns blockhain.

What is the difference between Bitcoin and Blockchain technology?

Bitcoin is a cryptocurrency, which is powered by Blockchain technology while Blockchain is a distributed ledger of cryptocurrency

What is the difference between Blockchain and a Database?

Generally a database is a collection of data which can be stored and organized using a database management system. The people who have access to the database can view or edit the information stored there. The client-server network architecture is used to implement databases. whereas a blockchain is a growing list of records, called blocks, stored in a distributed system. Each block contains a cryptographic hash of the previous block, timestamp and transaction information. Modification of data is not allowed due to the design of the blockchain. The technology allows decentralized control and eliminates risks of data modification by other parties.

Final Saying

Blockchain has a wide spectrum of applications and, over the next 5-10 years, we will likely see it being integrated into all sorts of industries. From finance to healthcare, blockchain could revolutionize the way we store and share data. Although there is some hesitation to adopt blockchain systems right now, that won't be the case in 2022-2023 (and even less so in 2026). Once people become more comfortable with the technology and understand how it can work for them, owners, CEOs and entrepreneurs alike will be quick to leverage blockchain technology for their own gain. Is Labour about to win a local election landslide? - podcast
Wed, 01 May 2024 02:00:43 GMT

Councillors, mayors and police commissioners across England and Wales are facing voters this week. What’s at stake? Helen Pidd reports

This week voters in more than 100 local authorities in England and Wales are heading to the polls. And Labour are predicted to win big. Helen Pidd travelled to Accrington in Hyndburn, where the local authority has an equal number of Labour and Conservative councillors, to see what people there thought about the local elections.

What she found was a more complicated picture than predictions of a Labour landslide suggest. She found the Conservative council leader in a surprisingly confident mood – and the local Labour politicians unwilling to speak to her. She also met voters in the town who told her of their discontent with Labour over its approach to the conflict in Gaza and that it was the Green party who would be picking up their votes.

‘The Greens are our enemy’: What is fuelling the far right in Germany?
Tue, 30 Apr 2024 11:42:56 GMT

The far right are on the march in Germany and the anti-immigrant Alternative for Germany has become the most popular party in several states. Immigration and a sense of being economically left behind have been driving factors in the rise in popularity but the Green party and the federal government’s climate policies have also borne the brunt of public anger. The Guardian travelled to Görlitz, on the German border with Poland, to find out to what extent Germany’s green policies are fuelling the far right

Jeepney strike under way in Philippines as deadline to modernise nears
Mon, 29 Apr 2024 07:28:12 GMT

Government tells operators they must join cooperatives by Tuesday and gradually replace their vehicles with greener options

A three-day strike by drivers of jeepneys in the Philippines began on Monday as transport groups warned that thousands could be pushed off the roads by government modernisation plans.

The jeepney is the backbone of the Philippines’ transport system. The customised, privately-owned buses, which look like a cross between a Jeep and a van and are decorated in flamboyant colours, ply routes in neighbourhood streets and city centres, offering rides for as little as 13 pesos (23 US cents). They have featured in pop songs and films – Pope Francis even travelled through Manila in a jeepney-inspired popemobile.

The Rise of Large-Language-Model Optimization
2024-04-25T11:02:48Z

The web has become so interwoven with everyday life that it is easy to forget what an extraordinary accomplishment and treasure it is. In just a few decades, much of human knowledge has been collectively written up and made available to anyone with an internet connection.

But all of this is coming to an end. The advent of AI threatens to destroy the complex online ecosystem that allows writers, artists, and other creators to reach human audiences.

To understand why, you must understand publishing. Its core task is to connect writers to an audience. Publishers work as gatekeepers, filtering candidates and then amplifying the chosen ones. Hoping to be selected, writers shape their work in various ways. This article might be written very differently in an academic publication, for example, and publishing it here entailed pitching an editor, revising multiple drafts for style and focus, and so on...

Hej, nej, hej hej: Danish words and phrases all travellers should learn
Thu, 25 Apr 2024 09:11:48 GMT

Thinking about visiting Denmark? From saying hello, to talking about owls in the bog, here’s how learning a little local lingo can enhance your trip and leave you feeling like an egg yolk …

OK, we’ll admit it. Danish isn’t the easiest language to learn – pronouncing certain words involves some invigorating tongue gymnastics and a talent for gulping down glottal stops. With just 6 million native speakers, Danish hardly matches widely spoken Mandarin (941 million speakers) or Spanish (486 million speakers) either.

But mastering a few basics – how to order a coffee or commenting on the weather by talking about windswept pelicans (seriously, read on) – can deeply enrich your experience when visiting Denmark. The Danes are a convivial bunch and will truly appreciate your efforts getting to grips with their Old Norse-descended syntax (no matter how foolish you may feel). Try to speak Danish in a snug cafe or pub and it could lead to some illuminating conversations and lifelong friendships. Heck, you might even be able to watch an episode of The Killing/Borgen with the subtitles off when you get back home too …

Drone footage shows Ukraine's 'Harry Potter castle’ in flames after Russian missile attack - video
Tue, 30 Apr 2024 07:19:59 GMT

Firefighters in the Ukrainian southern port city of Odesa battled a blaze in a private law academy after a Russian attack. The missile strike killed at least four people and injured 32 others after residential buildings and 'civil infrastructure' were hit. The law academy was in a Gothic-style building on the seafront and was known as the Harry Potter castle. Drone footage released by the Ukrainian armed forces show the building in flames.

On the frontline, Ukrainian officials say Russia is assembling forces for a huge summer offensive, despite its troops making only incremental gains in recent months. The Nato chief, Jens Stoltenberg, says countries have failed to deliver military aid to Ukraine in time, benefiting Russia on the frontline

G7 agree to end use of unabated coal power plants by 2035

Ministers from the G7 countries agreed on Tuesday to end the use of unabated coal power plants by 2035 – but left the door open for those heavily reliant on coal to breach the deadline.

After two days of talks in Turin, Italy, they published a pledge to “phase out existing unabated coal power generation in our energy systems during the first half of 2030s” to curb the rise in global greenhouse gas emissions.

Readers respond to Adrian Chiles’s piece on the danger of not taking ludicrous political leaders seriously

I thank Adrian Chiles for drawing attention to Adolf Hitler’s chilling quote from the 1920s: “It makes no difference whatever whether they laugh at us or revile us … whether they represent us as clowns or criminals; the main thing is that they mention us, that they concern themselves with us again and again…” (Everyone laughed at Hitler in the 1920s. A century on, are we making the same mistake?, 24 April).

As a very young child, I lived through the second world war in Dublin; while Ireland was neutral, the war was nonetheless very present to us there. Like Chiles, all my life I have wondered how millions of people could have been taken in by a figure such as Hitler, with terrible consequences.

Teargas and stun grenades used against Georgian protesters opposing ‘foreign agents’ bill
Wed, 01 May 2024 02:00:42 GMT

Police launch violent crackdown on demonstration against bill that pro-Moscow government is trying to pass

Georgian security forces used water cannon, teargas and stun grenades against protesters outside parliament late on Tuesday, sharply escalating a crackdown after lawmakers debated a “foreign agents” bill that is viewed by the opposition and western nations as authoritarian and Russian-inspired.

Reuters witnesses saw some police officers physically attack protesters – who threw eggs and bottles at them – before using teargas, water cannon and stun grenades to force demonstrators from the area outside the Soviet-built parliament building.

As we flagged earlier, the treasurer Jim Chalmers will today announce foreign investment changes, with approvals to be made quicker and greater scrutiny to be placed on potential risks.

You can read all the details on this from Peter Hannam below:

Right now, we treat investments from right around the world more or less the same. We want to streamline it for the less-risky investments so we can devote much more time and energy and resources to screening the sorts of investments that we’re seeing in critical industries – like critical minerals, critical infrastructure, critical data, and the like.

This is all about strengthening the foreign investment framework to make sure that investment is in the national interest. We want to maximise the right kind of investment, but we want to minimise risk and that’s what these changes I’ll announce today are all about.

Vinícius Júnior gives Real Madrid edge in semi-final after Kane rouses Bayern
Tue, 30 Apr 2024 21:10:11 GMT

These are Real Madrid’s principles, and if you don’t like them … well, they have others. Here Bayern Munich forced Carlo Ancelotti’s side to play not one game but several: an early defensive rearguard, a gradual arm-wrestle for control, a chaotic period at the start of the second half and finally a late quickening as they chased down the lead wrought so spectacularly by Leroy Sané and Harry Kane.

That they are still standing, perhaps even marginal favourites in this semi-final, is a testament to the speed and agility with which they manage to find solutions, to sense the little fissures and shifts in energy before they even happen, to smell the goal before it has even been conceived. And of course it helps when you have a forward of the relentless, remorseless, red-blooded quality of Vinícius Júnior, who added a cool late penalty to his sumptuous first-half goal.

It’s Mark Zuckerberg as we’ve never seen him! But what’s really behind the new look? | Arwa Mahdawi
Tue, 30 Apr 2024 15:28:18 GMT

With his interchangeable T-shirts and short neat hair, Facebook’s founder famously ‘never tried to be cool’. Is his makeover just a distraction from what’s going on at Meta?

A vibe shift is afoot in Silicon Valley. For aeons, the movers and shakers of the tech industry signalled that they were serious people working on serious things via their simple outfits. Crypto mogul Sam Bankman-Fried (now in jail) always looked as if he had rolled out of bed and forgotten to change out of his pyjamas. The late Steve Jobs famously adopted a uniform of black polo necks. Mark Zuckerberg, meanwhile, once boasted that he owned and wore multiple versions of the same T-shirt because it was efficient.

“I’m not a cool person and I’ve never really tried to be cool,” Zuckerberg said in a 2014 Q&A. “I really want to clear my life so that I have to make as few decisions as possible … I feel like I’m not doing my job if I spend any of my energy on things that are silly or frivolous.” That attitude seemed to extend to his hair, which has always been kept Lego-style short.
